My doctor and I were discussing my diet one time, told him that I had to go on two diets cause I wasn't getting enough to eat on just one.
LOL, you reminded me of something my Grandmother used to say. Since she was in her 30'sshe suffered from severe arthritis that at one point caused her hip bone to wear a hole through the hip socket. This could not be fixed because at the age of 70 she was mostly immobile and weighed 300lbs removing her from surgery potential. Her "go to answer" about her weight was very revealing...
"I want to live forever, so I will never diet. Diet is nothing more than death served with tea (Die T)."
"Hocus Pocus". So creative, and looks yummy.

What a wonderful list! I would like to add something to the pie option though. Awhile back, my best friend who is also Diabetic like I am was upset that he could no longer enjoy his favorite pie. I spent many nights trying to solve the problem only to finally have an "Ah Ha!" moment and discovered the super simple solution. So for those of you who need to watch the sugar intake, here is a fall gift from an Old Diabetic Man who still loves his treats...
Guilt Free Classic Pecan Pie

Attention pecan pie lovers! Here's a classic recipe using sugar free substitutes.
Ingredients
Makes 1 9-inch pie
1 cup *dark corn syrup*Sugar Free CORN SYRUP Substitute:
replace equal amount of sugar-free maple syrup for cornstarch. Sample different syrups, the thicker the better3 eggs
1 cup sugar (Splenda, the other substitutes leave a "funny" off flavor)
2 tablespoons butter, melted
1 teaspoon Pure Vanilla Extract
1 1/2 cups pecans
1 (9-inch) unbaked or frozen deep-dish pie crust
Step 1
Preheat oven to 350°F.
Step 2
In a mixing bowl, mix corn syrup, eggs, sugar, butter, and vanilla using a spoon. Stir in pecans. Pour filling into pie crust.
Step 3
Bake on center rack of oven until center reaches 200°F and springs back when tapped lightly, about 55 to 70 minutes
This looks like the 'top rack' in our dishwasher, and the bottom rack is empty.
